The “lees” of this vinegar are from two 80 years old barrels recovered from an old vinegar factory. After a period of splendid years, only dust and cobwebs could be found in this factory that left behind its splendorous past. What for many was rubble and scrap for us was a great treasure: the “lees” of the vinegar. Each barrel produces vinegar with a different smell, color and taste, creating a symphony when they are together. Their lively colours, ranging from straw yellow to tawny throughout different shades of amber could deceive us. A warning will alert us: Oju! (watch out) Wine vinegar. Made with the traditional method, the elaboration of this domestic production of natural vinegar receives minimal filtering to keep all its properties, so it can contain natural sediments from its own lees.
